SCALFARO TIMEPIECES
“SCALFARO“– COMPANY & PEOPLE
Out of a family with a longstanding tradition in the manufacture of fine jewelery, brothers Alexander and Dominik Kuhnle grew up in a truly creative and entrepreneurial atmosphere. Their appreciation for craftsmanship and ingenious mechanics lead them to become avid watch collectors and finally - in 2001 - to establish their own watch brand “SCALFARO”.
The founders’ uncompromising focus on quality and precision, combined with their creativity and dedications, have shaped “SCALFARO” into a powerful brand with a strong unique character. Its remarkable and authentic designs have assisted to establish “SCALFARO” as one of the rare family-owned manufacturers of fine mechanical timepieces.
“SCALFARO“– The TIMEPIECES
Our time instruments feature extraordinary constructions and the finest mechanical movements; they unite traditional artisan techniques, high-tech materials and a distinct timeless design.
We believe that truly special timepieces can only be created with passion, perseverance, accuracy and time. In our Swiss ateliers we build each SCALFARO with immense love for details and all respect for the high expectations of our clients.
We are particularly proud of our innovations in the fields of case construction and new manufacturing techniques, like the “SCALFARO Multi Step Gasket System“ (SMSGS) which protects the joints from direct contact with liquids or our “Retro Moon” in-house movement with retrograde indication and moon phase. These examples perfectly demonstrate our company’s commitment to innovate new facets to the world of fine watch making. The manufacture of our timepieces unites traditional craftsmanship with the latest technology as well as state-of-the-art materials like tungsten or ceramics. The search for perfection in every detail is our all-time motivation.
“SCALFARO“– The STYLE
A unique and powerful design language marks the inimitable character of each SCALFARO timepiece: extraordinary shapes, multi-level case architecture with interplay of surface structures and facets are just some of the prominent features that set our timepieces apart. A SCALFARO timepiece forms a harmonious unit radiating by clear lines,sporty elegance, refined functionality and impressive solidity.
“SCALFARO“- The COMPANION
We would like to share our love for precision and fine engineering with all those who share such passion and like to wear this kind of fascination symbolically as a permanent reminder around their wrist. Especially those who enjoy the fascination of yachts, motor sports or aviation – just to name a few areas – a SCALFARO timepiece incorporates these inspirations as an individual,spiritual companion close to the pulse.
“SCALFARO INDIVIDUAL“- THE WORLD’S MOST PERSONAL TIMEPIECE
“SCALFARO INDIVIDUAL” is our new made-to-measure and bespoke atelier where our master watchmakers and artisans create unique pieces and micro-series in close collaboration with our clients. The ideas and suggestions of our customers inspire our craftsmen to create extraordinary timepieces complementing highly skilled workmanship with innovative and proprietary techniques like the SCALFARO Ceramic Intarsia which combine high-tech ceramics and stainless steel.
Whether it be a characteristic element of a personal hobby or a symbol for one’s favorite excitement, the silhouette and color of a vintage car or simply one’s initials, “SCALFARO INDIVIDUAL” incorporates truly personal elements into a unique high-end timepiece.

Bon bon chicken + Panamera Chardonnay & Millaman Chardonnay
Bon bon chicken is a very typical Chinese dish which is popular at the supper table in Japan.
Chicken without skin definitely matches lighter whites, but the bon bon sauce has quite strong flavour as it contains ginger, garlic, sesame paste etc.---. Taking this into consideration, I chose two Chardonnays. One is Panamera from California and the other is Millaman from Chile. Sesame is like nuts, it has very rich and oily taste particularly when pasted. Nuts in general go very well with rich Chardonnay which has woody and buttery character from barrel hence my selection.
Also a bit of residual sugar in the wines also helps when pairing with a sauce which has a natural sweetness from sesame paste along with a bit of sugar. Indeed the creamy texture and weight of this sauce is very similar to that ones of the two
chardonnays. This time I added tomatoes as garnish since I thought it looks very colorful and summery, but if you choose Millman Chardonnay cucumber is a better alternative. Millaman has more minerally and less sweet fruits, so cucumber should pair better.
<Ingredients>
Chicken with skin 450g
Tomato (Yellow, Cherry, Green) or julienne cut cucumber
Finely chopped ginger 1 1/2 tbs
Finely chopped garlic 3/4 tbs
White sesame paste 3 tbs
Soy sauce 3 tbs
Vinegar 1 tbs
Sesame oil 1 tbs
Chili oil 1 tbs
Sugar 2 ts
<How to cock>
Boil chicken (if available please add some green part of green onion and sliced unpeeled ginger) for 20 minutes. Once chicken is cool slice it into 5 mm pieces. If you use a pressure cooker, cook the chicken for 3 to 4 minutes.and leave in it until it gets cold.
In the middle of a dish place the sliced chicken and display cut tomato around it. If you prefer cucumber spread julienne cut cucumber and put chicken on it.
Pour sauce over the chicken and serve.

EMBLEM The Oso Vineyard Cabernet SauvignonThe Oso Vineyard Cabernet Sauvignon is harvested from the family’s Oso Vineyard. The vines grow on beautiful, stone-lined terraces, out of a rocky, porous soil. The high drainage stresses the vines, leading to high flavor concentration. The fruit remains fresh and vibrant throughout the growing season due to mild temperatures –warmer evenings and cooler days than on the valley floor –and afternoon breezes that blow straight down the vineyard rows. From the soil and elevation this mountain fruit extracts intense varietal characteristics, a firm structure, and excellent aging potential.
The valley floor’s warm climate and deep, well-drained soils produce vigorous vines that receive more sun exposure than in other parts of the Napa Valley. To moderate and distribute the sun’s heat, the vines are planted in east-west facing rows. A single-sided ballerina trellising system shades the fruit from intense morning sun. The Napa Valley Cabernet Sauvignon owns a fruit of excellent quality.
