FvM Rose was served at the opening reception of the “Form of the heart- Flowers of Akane Teshigawara”

 

The exhibition CELEBRATES the 10th anniversary of the Sogetsuyu Iemoto inheritance, “Form of the heart- Flowers of Akane Teshigawara”.  It was held at Spiral Garden during 31st May – 5th June and the opening reception was held on 31st May.

After the greeting by Iemoto Akane Teshigawara and the congratulatory speech by the CEO of Takashimaya Ltd. Koji Suzuki, and the CEO of Japan Life Design Systems Masakazu Taniguchi, Fürst von Metternich Rosé was served as the drink for the toast. The soft color of the Rosé was reminiscent of the Iemoto’s work of the color of rose which helped to express her beautiful works.

We have spent the past several years strengthening our relationships with Napa Valley’s most renovated growers and enhancing our own top-quality estate fruit through our recent acquisition of the Tonella Vineyard in Rutherford.

 

As you known we’ve never followed the pack with our Chardonnay. It is full-bodied, crisp, clean and Burgundian-like in style with great varietal expression. Our Chardonnnay grapes come from Dijon and Wente clones grown in the renowned Carneros District in Napa Valley. With the 2009 vintage, we are pleased to introduce a few new grewer acquisitions, which, along with the Beckstoffer Vineyard. Haire Vineyard, and Ghisletta Vineyard create a fresh expression of Carneros Chardonnay.

Viognier 2009

 Winemaker’s Comments: Our Viognier it´s a full expression of the  orange fruity, fresh, and well balanced, very easy to drink. In the nose there are  lots of ripe apricots, pineapple, peaches and hints of citrical flowers. On the  palate it´s very aromatic reminding the nose, soft texture, deep and gentle white soft refreshing finish.  

 

Variety: 100% Viognier
Region; Central Valley

Climate & Soil: Semi-arid Mediterranean climate, with an annual averagerainfall of 400 mm, concentrated in winter. Warm and dry summers, withgreat thermal oscillation between day and night. In this strip of land, located at the foothills of the Andes, night temperatures tend to be lower because of cold air that flows down from the mountains, causing a daily thermal oscillation C. Alluvial origin soils, stratified and slightly sloped of°that can exceed 20 medium depth and texture with basic pH.

Vinification: The grapes were picked late march to ensure the ripeness andvarietal flavours, crushed and immediately pressed. Free-run and low pressure were used for production in order to secure maximum fruit concentration and a good acidity balance which is a characteristic of this variety. A long fermentation took place at 14°-15°C for 3 weeks. After Fermentation, the wine was kept in contact whit lees for two weeks to increase complexity and gain softness.

Suggested Food: Sushi, Chinese foods and salads.

acidity: 5.61g/l (H2SO4)

alcohol: 14.1 % vol

residual sugar: 6.9 g/l

 

Pinot Noir 2009 

Wine Making Details: All the stems of the grapes were removed with  partial crushing of the berries. The must was cooled to reduce the temperature  immediately after crushing to maintain flavors and aromas and reduce the level of SO2. Cool pre-fermentation maceration for two weeks to extract  primary flavors and color. Fermented in stainless steel tanks with jackets  between 20- 25°C. Total maceration period 25 days. Natural malolactic  fermentation at 16°C. No fining and this is a unfiltered wine.

Cellar Potencial: 4 years


 
Agening:100% of the wine was kept in French oak barrels of second/third use for a preiod of 10 months,

Total Acidity: 5.01 g/l (Expr. Acido tartarico)
pH: 3.51
Sugar: 2.70 g/l

Parings: All kind of white meat, pasta, pizza and soft cheeses.

Red Capsicum carpaccio & Cava Yate Rose

Red capsicum carpaccio  


Ingredients
Red capsicum:3
Juice from the pickled shallots: 75cc
Extra virgin olive oil: 25cc
Myoga ginger: 2

Cut the red capsicum in half and grill until the skin is brown. Peel the skin and cut again in half lengthwise.


Mix the olive oil (25cc) and the juice from the pickled shallots (75cc) and marinate the red capsicum for a day. Cut the red capsicum sideways in bite-sized pieces and place it on a plate. Put the finely cut myoga ginger on top of the capsicum and sprinkle black pepper and a bit of salt according to your taste.



The juice from the pickled shallots is too good to be wasted. So I sometimes eat carrots marinated in this juice. It is very convenient as if you marinate it in the morning it is already perfect in the evening. Actually, I do not pickle the shallots myself but ask my father to give me some of his pickles every year. Make sure you try this red capsicum carpaccio before throwing away the juice when you buy pickled shallots not too sweet.  



I matched the Cava Yate Rose for the red capsicum carpaccio. As the marinade juice flavor is not too strong, you can still enjoy the original red capsicum taste even after it is marinated for one night. Capsicum alone will be very mild but by adding myoga ginger, the carpaccio flavor tightens the flavor up and gives a more three-dimensional flavor. The natural sweetness of the capsicum matches very well with the fruity Cava Yate Rose flavor. Myoga ginger matches well with strong characteristic white wine such as Gewurztraminer and Viognier and rose. When you eat carpaccio and sip Yate Rose, a round harmonized flavor expands in the mouth and you will feel a smoky tone that comes from the grilled carpaccio as an aftertaste that makes it a more complicated marriage.



If you add Pizza Margherita that matches perfectly with Cava Yate Rose, you already have a simple dinner ready!
