Originally from Marseille, Rousset-Rouard family has owned the impressive "Citadelle" in Ménerbes since 1980. In 1989 Yves Rousset-Rouard purchased an ancient provençale farmhouse with 8 hectares of vines and decided to throw all his passion and efforts into creating Domaine de la Citadelle and sculpting a "grand vin" that reflectes the quality and typicity of the Côtes du Luberon appellation, the youngest of the great names of the Rhône Valley

Cheese Gratin with Celery Matched accompanied by Fabio Contato from Provenza

Ingredients

Celery: 6 sticks

Cheese: Approximately 120g. (Please change the portion, as you prefer) Preferably, please select pepper jack or cheddar, or alternative with a strong flavor.

Black pepper: As you think proper.

Cut the celery sticks into 5 cm length, and boil them for about 15 minutes. Place the celeries on bakeware, then put ground cheese on top. Then sprinkle the pepper. Again, place celeries and make layers. The very top should be the cheese layer with black pepper on top. Add some butter on top. Set the oven to 220 degrees. Broil till cheese gets melted. Enjoy this dish to the maximum when the celery is in its best season. The recipe is very simple as all you need is celery and some cheese. Celeries when boiled lose strong sharpness. Therefore, I would like to recommend cheeses with strong flavor such as pepper jack, a cheese with jalapenos, or British cheddar cheese.

Fabio Contato from Provenza has a vibrant aroma accompanies a hint of butter. The core of the wine on the palate has sweet fruitiness and supported by clean acidity.  This wine is rich, round, with elegant oak nuances on the palate. Since this wine has richness in its body the weight of the cheese matches perfectly and the spicy hint of pepper jack, adds an accent. Acidity coming from wine soothes the oiliness coming from cheese, creating fresh aftertaste. Please don’t forget to scrape the cheese that was nicely burned and stuck on the side of the plate. You will enjoy the crunchiness.
