Chateau Leoville Barton

At a very early stage, in 1638 a Monsieur Moytie, had started assembling little parcels of land on the hillock just south of Latour, across the stream that divides the parish of St.-Julien from Pauillac. He named his gravel ‘dune’ Mont-Moytié. A century later it was bought by a President of Parliament, Monsieur Léoville. At this stage it was possibly the largest vineyard in the Médoc. Today it is divided into three, and Léoville Barton is one of the trio, of these St.-Julien estates with the name Léoville (all of which are 2nd growths).

Cod is very light, so the trick to matching this dish with wine is to analyze the sauce. 

There are some ingredients with strong flavor in the sauce namely Garlic, Rakkyo, butter, balsamic vinegar and soy sauce.  For cod on its own without a sauce, a medium body Chardonnay is too strong, but thanks to the strong flavored sauce you can enjoy it with beautiful Heitz Chardonnay.   Butter goes really well with Chardonnay and the sweetness from Balsamic vinegar match very well with the flavor and fruits of Heitz Chardonnay, which has gone through moderate barrel aging.  Given the subtle nature of  Heitz Chardonnay,  which is not a typical bold new world style can allow you to create wonderful matching without overpowering the cuisine. 

This is a dish even people who are not keen to fish will enjoy.  Please try it!


Cod with colorful bell pepper sauce
Ingredients for two people

Two pieces of sliced Cod

Salt and pepper

Flour

Half each of small red and yellow bell pepper

1 clove of garlic

1 big Rakkyo (Pickled Shallots)

2 Table spoons of olive oil

1 Table spoon of butter

1 Table spoon of Balsamic vinegar

1 teaspoon of soy sauce

1/3 teaspoon of saltBlack pepper

How to cook

Salt and pepper the cod and then flour them.  Sautee them in the way that the surface of cod gets golden brown. 

Heat frying pan and put olive oil and butter.  Add minced garlic and Rakkyo and fry for a minute or so.  Add bell pepper and stir briefly. Turn off the gas after adding salt, black pepper, balsamic vinegar and soy sauce. 
Serve cod with the sauce.
