Aigle Royal Blanc (2017)
The Domaine de l'Aigle is a 31-hectare estate magnificently located in the northernmost part of the Haute Vallée de l'Aude winemaking region, ranging between 250 and 500 metres above sea level. Here we grow Chardonnay and Pinot Noir grapes of great elegance and finesse. L’Aigle Royal is a wine produced from the fruit of a plot of Chardonnay vines in the highest reaches of the estate, rooted in clay-limestone soil and facing directly south.
VINIFICATION AND MATURING
According to practices preserving the environment: pruning, destemming, de-leafing, thinning out, grape harvest vintage.
The vineyard is established on espalier to produce an optimal illuminated leaf area for grapes maturing. The vinestocks are planted with a relatively high density of 5.000stocks/Ha, which enables to control and obtain high quality wines, at low yield. The vineyard is tended in such away as to obtain a healthy harvest and moderate yields and hence get the very best out of the grapes. The harvesting date is only triggered once the grapes have reached optimum ripeness after daily tasting.
The grapes are picked by hand and the full harvest is pneumatically pressed at low pressure as soon as it reaches the winery.
After light static settling, the musts start their alcoholic fermentation in vats and are rapidly transferred to new barrels at the mid-fermentation stage. Malolactic fermentation is performed according to the characteristics of the vintage.
In conversion to organic certification
Bright yellow colour and intense nose.Complex and subtle aromas: fruit (pineapple, peach, apricot, almond), toast and white flower. Elegant and mineral in mouth, this wine is flavoured and has a subtly buttered texture, with a long finish.
H de l'Hospitalet Chardonnay (2017)
A bright yellow colour with green flashes.
The nose reveals aromas of yellow fruits with hints of vanilla. On the palate, this 100% Chardonnay offers fresh touches of citrus fruit, white flowers and vanilla and spices, leading to a lovely refreshing finish.
The grapes are picked at the peak of their ripeness, sorted as soon as they are brought into the cellar and then gently crushed in a pneumatic press to obtain the finest juice.
After cold settling, the alcoholic fermentation is started in temperature controlled stainless steel vats. Part of the wine is transferred into 225-litre barrels on its fine lees. The other part is aged in stainless steel vats to keep the fruity character of the grape variety.
The wine benefits from light fining before being bottled.
