Tasting Note：Rich gold in colour with amber tints. The nose is largely dominated by a multitude of yellow and white fruits. The prune has pride of place in this plethora of fruits alongside mirabelles, apricots, peaches and pears. The delicate notes of gentle spices conjure images of specialist confectionners. In the mouth there is a pulpy fullness with a light sharpness of fruity flavours, recalling the crispness of freshly picked plums. The finale is long and persistant with hints of almonds and candied fruits.
Vinification: Primary aging : From three to eight years in French oak barrels at each of the three chosen distilleries. Secondary aging : Maturing in old prune liqueur barrels in the BELLEVOYE cellars in the Charente during the three final months of blending. This subtle marriage of malted barley and prunes brings to the blend its intensity of fruit on the nose, and in the mouth at once abundantly rich yet refreshing.
