Tasting notes: The robe is gold and shiny with persistent bubbles. The nose reveals warm and powerful aromas in a very fine expression. The fruity notes of yellow fruits (apricot, pear) underline the power. Notes of honey and frangipane give the best final. In the mouth, the wine is comlex deep with a silky and revined texture. Elegant pastry notes are confirmed with aromas of brioche, honey, spices and nuts, supported by a slight bitterness. The long ageing on lies brings the perfect maturity showing the complexity and ampleness of the aromas.
Food Matching: Intense and refined, the Grand Vintage 2008 can be appreciated throughout the meal with a rosemary lamb shanks, for instance, or a grilled lobster.
Grape Variety: 45% Pinot Noir, 40% Chardonnay, 14% Pinot Meunier
Elaboration: After a cold and stormy 2009 spring, the hot and dry summer allowed a great growth of the vineyard. The summer weather during the harvest brought a great maturation to our grapes. For the Grand Vintage, only the grapes able to produce subtle wines with a long ageing capacity are selected. The blend is made of 45% Pinot Noir, 40% chardonnay and 14% pinot meunier, only the first press (cuvee) is used. After bottling, the grand vintage has been ageing for 9 years in our cellars for a slow development to reveal its power and subtlety.
Ageing: 9 years on lees.
Dosage: 4 g/l.
