Food Matching Game dishes such as deer, wild boar and hare. It also combines well with more delicate pairings such as with foie gras and truffle.
Grape variety 70% Grenache, 30% Carignan
Climate 2013 brings back the typical rainfalls in autumn and spring and thus allows vines to recover and grow. As a result, yields are rather high for Priorat conditions. Very healthy vines both for Grenache and for Carignan. This vintage is fresher than usual.
Soil 350 milions years old slate, localy known as "llicorella".
Vinification The first 7-10 days takes places the alcoholic fermentation at 27-30º C in open French oak barrels (500 liters of capacity). Each one of the 8 identified that are part of Clos Fontà is elaborated separately. Malolactic fermentation lasts 15-20 days at 20º-25º C in underground tanks, after malolactic fermentation.
Ageing The wines age in a 1.500 liter French oak tank, and in 30% newbordelaise French oak barrels (225 liters) for 14-16 months. 2 years in bottle.
