"At the Northern part of The Haut Médoc, just North of Pauillac, Saint-Estèphe has a mixed of gravely soils which are perfect for the Cabernet Sauvignon and clayish soils which are excellent for the Merlot. Most Chateaux grow both grapes, which complement each other. That blending policy creates well balanced wines combining the softness and fleshiness of the Merlot with the backbone and intensity of fruit of the Cabernet Sauvignon. Saint-Estèphe makes only red wines, which are rich, ripe, and very food friendly, a kind of archetype of Bordeaux wine. Chateau Cos d'Estournel is the most famous estate of the Saint Estèphe Appellation Controlée. Beside the five "Crus Classés" (classified growths) they are many "Crus Bourgeois" which provide excellent value for money. "
