Tasting Note: Brilliant ruby color. On the nose crisp, fresh red fruits with a chalky note. Fresh linear fruit initially, medium weight on the middle palate with a smooth, subtle finish.
Food Matching: Delicious alongside white meat dishes with tangy red fruit sauces, also goes beautifully with shellfish and red fleshed fish such as mullet, Atlantic bonito and tuna.
Grape Variety: 100% Pinot Noir.
Climate: Mild climate. Soil: Chalky clay soil, often from muddy limestones, with slopes covered by limestone scree.
Vinification: Hand-picked at optimum ripeness, the grapes are then sorted, 100% destemmed and put into vats. Fermentation, in contact with the skins, lasts between 20 and 25 days. After racking, pressing and settling, the wine undergoes malolactic fermentation before being aged between 14 and 18 months in barrel. The wine is then racked before being bottled, unfiltered. Elevage 100% in new oak barrels.
