Tasting Note: Brilliant ruby color. On the nose ripe forest fruits with a hint of chalkiness. Full rounded and generous with a good weight and a smooth ripe structure. The fresh fruits aromas carry through to the finish.
Food Matching: Ideal with grilled or sautéed red meats, as well as duck. When young, also delightful with shellfish and red fleshed fish (mullet, tuna Atlantic Bonito).
Grape Variety: 100% Pinot Noir.
Climate: Mild climate. Soil: Chalky clay soil, often from muddy limestones, with slopes covered by limestone scree.
Vinification: Hand-picked at optimum ripeness, the grapes are then sorted, 100% destemmed and put into vats. Fermentation, in contact with the skins, lasts between 20 and 25 days. After racking, pressing and settling, the wine undergoes malolactic fermentation before being aged between 14 and 18 months in barrel. The wine is then racked before being bottled, unfiltered. Elevage 100% in new oak barrels.
Ageing: 18 months in barrel (oak) for red wine.
