Tasting Note: Brilliant ruby color. On the nose fully ripe wild berries with a spicy undertone, slightly roasted from the ageing which also brings out a complex bouquet of red flower floral notes. Fruit forward at the beginning with a balanced tannic structure showing later. Fresh and consistently aromatic finish.
Food Matching: Beautiful accompaniment with pan fried or grilled red meat and Provençal inspired vegetarian dishes.
Grape Variety: 100% Pinot Noir.
Climate: Mild climate. Soil: Brown, some limestone, gently sloping. Harvest: Manual.
Vinification: Hand-picked at optimum ripeness, the grapes are then sorted, 100% destemmed and put into vats. Fermentation, in contact with the skins, lasts between 20 and 25 days. After racking, pressing and settling, the wine undergoes malolactic fermentation before being aged between 14 and 18 months in barrel. The wine is then racked before being bottled, unfiltered. Elevage 100% in new oak barrels.
