The commune of Savigny les Beaune is located between Aloxe Corton and Pernand Vergelesses, in the north of the Côte de Beaune.
Savigny mostly produces red wines under the village and premier cru appellations.
The vineyard has south, south-east, east and north-east exposure and is situated between 220 and 360m. The chalk soil is gravely or stony.
"Les Vergelesses", is a little vineyard located on the nicest and best exposed hill, very close to Pernand. Grapes can mature very well in this place. The soil is light and dries very well after rain. Some Chardonnay is even planted there.
The fermentation takes vats during 3-4 weeks, after which the wine is aged in wooden barrels for 12 to 15 months before being bottled.
winemaker's comments / gastronomy
The "Vergelesses" is quite strong compared to most of the wines from Savigny. It shows a nice colour and smells of red berries. Its tannins are elegant.
This wine will be perfect with any dish of red or white meat and matches game very well. Highly flavoured sauce will be perfect with an older wintage.
This wine will certainly improve up to 8-12 years in good cellaring conditions (humidity and temperature).
