Tasting Note: Very elegant and friendly wine with pear and red apple aromas accompanied by honey and cinnamon notes which are easily appreciated. Round on the palate with high fruit concentration.
Food Matching: Ideal to combine with seafood, fish, white meats and pasta. Also serve with seasonal fruits and white cheeses.
Grape Variety: 100% Chardonnay.
Climate: Mild climate, and a 20°C. temperature range.
Soil: Coarse soil with very low water holding capacity.
Vinification: Hand harvesting. Bunch selection. Destemming. Berry selection. Chilling down of the grapes to 12ºC. Pneumatic pressing. Cooling of the musts at 10ºC. Cold settling and racking. Controlled fermentation at 15ºC. Malolactic fermentation in new French and American oak barrels (25% of the wine).
Ageing: Aged sur lies during 9 months. Filtering and bottling.
Acidity: 6.58g/l.
PH: 3.26.
Residual sugar: 2.47g/.l
