Grapes are sourced from different climatic zones within the region. Grapes are de-stemmed before going into the separator. Free run juice and skins are separated after 12 hours before fermentation starts. A portion of the tanks is fermented with staves or chips.
Aging At least 3 months of contact with the fine lees before bottling.
