Tasting Note: Intense red color with purple tints. A seductive wine, of rich intensity that reminds us of ripe red fruits like plum and cherry which then open to floral notes and small notes of spices. On the palate it is juicy with a balanced acidity and fine and sweet tannins.
Food pairing: The harmony of this wine allows a wide pairing with white and red meats and also pastas.
Grape variety: 100% Merlot.
Vintage: Grapes were handpicked the 3rd week of April. The terroir allows us to obtain a great color and concentration of aromas, with a balanced acidity.
Vineyard: Vineyard planted in Sagrada Familia in soil of alluvial origin, just a few meters away from the Mataquito river and driven in traditional trellis with irrigation by furrow. The thermal regularization of the river, the climatic condition of the valley and the good porosity of the soil allow the vine an excellent adaptation to this terroir, to achieve a perfect maturity of its grapes.
Fermentation Notes - the grapes were destemmed and grinded gently for a long and cold maceration. Fermentation was done at moderate temperatures to make a soft extraction and also keep the fruitiness of the wine; -selected yeasts; -complete malolactic fermentation.
Ageing: Aged in French oak barrels for 6 months.
Filtration: Wine stabilized at cold temperatures and filtered <3 NTU, during the bottling process, it passed through a 3μ membrane.
Acidity: 3,46 g/l.
Residual sugar: 2,44 g/l.
