Tasting Note: A frank and complex wine with ripe aromas and green leaves that show the versatility of the variety. Aromas of fresh tropical fruits such as pineapple and peach, along with some citrus and floral aromas. A balanced, faithful expression of the work of the vineyard, juicy and very fresh.
Food Matching: Ideal for appetizer or to pair with raw seafood.
Grape variety: Sauvignon Blanc.
Terroir: The vineyard of Sagrada Familia is characterized by warmer temperatures than the area close to the Andes Mountain range, achieving the maximum potential of our varieties. This is how the Sauvignon blanc is planted in pergolas, avoiding radiation and thus preserving the maximum aromatic potential of the variety. We also seek to maintain a late lignification, so that the plant is in constant production of young leaves, which through photosynthesis generate a harvest with good natural acidity and a great intensity of aromas.
Harvest: We know that this variety has an aromatic peak and a very narrow harvest window, which is why the grapes were handpicked the 1st week of March.
Vinification: Grapes were destemmed and pressed; fermentation was done at low temperatures; selected yeasts; once the fermentation is finished, the wine was in contact with the lees (“sur lies technique”) to give a greater volume in the mouth; without malolactic fermentation.
Acidity: 6.66 g/l.
Residual sugar: 1.69 g/l.
