Tasting Note: Great intensity of color, deep with a very elegant, attractive and seductive violet hue. On the nose, the notes that stand out, mainly the fruity and floral aromas. In the mouth, a sweet flavor balanced with natural acidity makes it unctuous and has a fruity finish.


Climate Our estates located in San Rafael receive pure water from the Diamante River and gentle breezes from a continental climate that determine the exact rythm for the grape ripening. Our vineyards, between 600 and 800 meters above sea level, are benefited by a marked difference in temperatures between day and night which results in a balanced and constant fruit ripening. 

Geology San Rafael, it is characterized by its loamy-sandy-silty soil, with variable depth and well-defined layers of small boulder. The silt presence -more abundant in certain zones of the estate- allows the water to be retained by the soil, interfering with the plant extraction through the roots, thus enabling a deeper root development

Harvest Manual and machine

Vinification Immediately received the grape in the winery, a careful destemming is carried out, obtaining in this way the whole grains, we carry out the vatting directly in the stainless steel tanks. Once vatted, a cold maceration is practiced at 8 ° C for 2-3 days. In this process, we do the gentle extraction of color by means of closed pump-overs. After 4 days, we inoculate selected yeasts, starting the fermentation process. Temperature is one of the fundamental parameters in the production process, keeping it between 22 ° C to 24 ° C. Through the centrifugation process, fermentation is interrupted, leaving around 100 grams per liter of natural grape sugar, and a sparkling natural carbon dioxide remaining from fermentation. Finally, the cut is made, the wine is stabilized and bottled under a pressurized atmosphere of carbon dioxide.
