Vinification: 100% stainless steel fermentation.
Aging: 80% French oak staves and 20% American Oak staves for 6-8 weeks. This helps to add complexity of spices (baking spices, vanilla, cinammon and toast) but to also give it nice structure and tannins.
Acidity: 6.1 g/L.
Residual sugar: 7.8 g/L.
