Food Matching: Peñascal can boast of being the most versatile rosé wine: It fits all kinds of flavors, tastes and cultures. It is ideal to accompany any time of day and celebration. Is the best companion for both appetizer morning or afternoon -fish light dishes and seafood, white meat, grilled dishes, salads ... , as well as through the Mediterranean, Asian or Italian cuisine.
Grape Variety: Tempranillo, Bobal, Cabernet Sauvignon.
Terroir: 300 vineyards in Castilla y León (Medina del Campo) rest between 550 and 650 m above the sea level.
Climate: Strong continental climate with hot, dry summers and sharp cold winters. Diurnal temperature shifts very pronounced with cool nights/long, hot days. Low rainfall.
Soil: Thin and poor calcareous and clay soils. They do become richer in minerals and clays near the region's river.
Vinification: The majority of the wine is made from gentle pressings and a small percentage from saignée (bleeding). Followed by cold fermentation with a variety of selected yeasts to maximise red fruit flavours and freshness.
