Grattamacco - A Super Toscana (Exclusive to Pieroth Japan)
Grattamacco was founded in 1977. It is situated on top of a hill, that faces the sea between Castagneto Carducci and Bolgheri at 100 m. above sea level. The area is particularly dedicated to the production of great wines and enjoys a dry climate .
The estate extends over an area of about 30 hectares, of which 11 are vineyards and 3 are olive groves. The remaining area is forest and borders into a vast area of woodlands covering some 1,600 hectares. Also here, steep and hilly vineyards, yet with an average eight percent incline, only, are trained partly to Cordone speronato and alternative to Guyot, with yields of around 5.5 to 6 tons per hectare.
During the harvest the grapes are carefully selected and started off for fermentation in truncated cone shaped oak vats holding 800 litres, where stirring is manual and only the autochthonal yeasts will be present in a long maceration process.
The malolactic fermentation through indigenous bacteria, only, will be completed in barrique, keeping the different varieties separate.
After 12 months a blend will he created and return into barrique for further refining. The aging process in French barrique will last for 12 to 18 month and is followed by a bottle refinement always superior to 6 months. The estate follows the criteria of organic farming, guaranteed and certified by AIAB.
