Tasting Note
COLOUR Full red with crimson highlights.
BOUQUET Attractive savoury dark olive and cherry fruits, lifted with aromatic nuances of cloves and vanilla.
PALATE This is an elegant, medium bodied wine showing a silky texture and soft acidity. The spectrum of fruit flavours include cherry and plum characters.
 
FOOD SUGGESTIONS An excellent match with medium to full flavoured courses, such as tender rare beef. Try it with Italian influenced dishes.
CELLARING POTENTIAL Excellent on release and will age over the next 4 to 6 years.

Terroir/Vinification

Terroir: The vineyards are grown on ancient soils. Cooling sea breezes at night moderate the summer temperatures to extend the ripening season producing full flavoured wines.

Climate: McLaren Vale has 'Mediterranean' climate of winter dominate rainfall and dry summers cooled by sea breezes ideal for ripening premium grapes.

Geology: Sand and black loam over clay

Harvest: Machine

Vinification: Following night harvesting on 17th February 2016, the grapes were fermented in small static fermenters for 7-10 days before pressing. The wine was racked to oak for 17 months maturation and received several rackings to soften the tannins and integrate oak and fruit. Prior to bottling in November 2017, the wine received a light fining to round the structure.

Aging: 29% New French oak, 17% 1 y.o French oak, Balance older.
