Description

Tasting Note:  Vibrant juicy red berries on the nose with soft oak nuances. The palate displays ripe mulberry and fresh raspberry flavours, complemented by soft tannins and a long, smooth finish.

Food Matching:  A great companion to variety of red meat dishes such as beef, lamb and venison.

Grape Variety:  Syrah 52%, Mourvedre 19%, Grenache 19%, Carignan 10%.

Terroir/Vinification

Soil: Granite soils & shale.

Vinification: The grapes are hand-picked in the early hours of the morning, destalked and crushed. The juice and grapes are cooled and pumped into stainless steel tanks, inoculated with yeast and fermented at 28°C. Finally the grapes are pressed, the juice transferred back to stainless steel tanks for malolactic fermentation that took place over 2 – 10 weeks. This wine is then further matured in tank for up to 12 months to soften and integrate the tannins before blending and bottling.

Ageing: 6 months, 2nd & 3rd fill French oak barrels.
