Tasting Note: A purple and intense color. Black fruits aromas (blackberry) which improves when aerating. It surprises with its concentration, texture and lenghth. Discrete but present tanins.
Food Matching: Game animals and red meat, cheese such as Brie, Saint Nectaire and Coulommiers.
Grape Variety: 100% Pinot Noir.
Soil: On a slope rich in stones with excellent drainage.
Harvest: Manual, selective sorting in the vineyard and at the winery.
Vinification: 30% to 50% a full grapes. A long and controlled fermentation over a period of 3 weeks minimum.
Ageing: French oak barrels of which 50% are new oak. Ageing from 15 to 18 months.
Acidity: 3.34g/l.
PH: 3.62.
Residual sugar: >0.7g/l.
