Surface: 2.26 hectares. Between the Clos de Vougeot Grand Cru and The Musigny. Well drained and stoney soil.
Grape Variety Pinot Noir 100%.
Density of the vines 10 000 stocks/hectare.
Cultivating Techniques Organic farming. Strict yield control (green harvesting and de-budding).
Harvest Hand picking in cases (20kg). Hand sorting in the vineyard. Selective sorting at the winery, 35 % non destemmed. Pre-fermentation cold maceration.
Fermentation Slow and soft vinification in thermoregulated tank. Using only natural yeast from the grapes. Extraction by manual punch downs. In tank for 21 to 28 days.
Ageing French oak barrels of which 50% new oak.
Ageing 16 to 18 months.
