Tasting Note: Intense ruby red colour, the wine acquires orange hints as it ages. This wine has a pleasant characteristic and ethereal bouquet. Dry, velvety, tannic with a perfect balance between soft tannins and acidity.
Food Recommendations: It is excellent served with intense flavour meat dishes, such as roasts, game, spicy salumi and mixed grilled meats. At the end of a meal it can be paired with firm, mature hard cheeses.
Grape Variety: 85% zinfandel organic and 15% other varieties.
Climate: Warm and temperate, with significant rainfall all year round. During the summer the African winds cause rapid and marked rise of the thermometer and high temperature variation.
Soil: Clayey and calcareous, fresh and very fertile with good presence of limestone in the north, ferrous in the south.
Vinification: Vinification is carried out using the traditional “submerged cap” system, carefully controlled in order to extract delicate tannins and varietal fruit characteristics During the maturation phase in stainless steel tank s in wood and bottle, these evolve to reach their highest possible levels Maceration lasts for 12-15 days at controlled temperatures not exceeding 25℃.
Ageing: Barrique 225lt and toneaux 500lt, 6 months in barrel.
Acidity: 5.8 g/l.
Residual sugar: 0.8 g/100ml.
